Ingredients:
- 2 large eggs¾
- cup cooking oil
- 1 cup sugar
- 3 tbsp cocoa powder
- 3 cups desiccated coconut
- 500g self raising flour
- 125g butter
- Cooking chocolate to complete
Method:
In a large mixing bowl, add the butter and oil.
Whisk the butter, sugar and oil until light and creamy.
Add the eggs. Mix well.
Add the cocoa powder and stir to combine.
Add the self-raising flour and coconut and mix by hand to make fairly stiff dough.
Roll out dough to 2-3mm thick on a lightly floured surface and cut out round shapes with a biscuit cutter. Transfer onto baking sheets.
Bake in a pre-heated oven at 180°C for approximately 8-10 minutes.
Allow to the biscuits to cool on a wire rack.
Melt the chocolate over a double boiler.
Sandwich two biscuits together using the melted chocolate.
Leave to set. Store in an airtight container.
