Ingredients

2 rolls puff pastry

Coconut jam for the coconut filling

4 cups coconut

2 cups water

2 teaspoons vanilla essence

2 cups sugar

2 sticks of cinnamon
Boil together until water has absorbed and it’s glossy
Method
Roll out pastry and line two dishes with pastry.
Fill with coconut and blobs of jam.
Brush with beaten egg and bake at 180°C for 30 minutes or until golden brown.
