Ingredients
4 cups of cake flour
1 cup of sugar
4 tsp baking powder
A pinch of salt
1/2 cup of melted butter
1/2 cup of buttermilk
3 eggs
1 tsp of nutmeg
1 tablespoon of vanilla essence
Method
Beat the sugar and eggs for a few minutes, add the rest of the ingredients, mix by hand lightly till a soft dough is formed.
Roll out on a well floured surface.
Cut out the doughnuts with a doughnut cutter.
Allow the doughnuts to stand for about 6-8 minutes – allowing a thin skin to form, this ensures that the doughnut will not be oily.
Deep fry on a medium heat, heating the oil till nice and hot, first throw in a small piece of dough to check if oil is hot enough – if it cooks too slow it will be oily and soggy, too fast, it will be dark and a bit raw inside.
Fry for about two minutes a side.
Make a simple syrup by bringing to boil two cups of water with two cups of sugar.
Stir and switch off heat.
Dunk the fried doughnuts just once and take out with a slotted spoon.
Now you can decorate with any glaze, melted chocolate, dust with icing sugar and place some jam on top or roll in cinnamon sugar.
How to make the lemon glaze
TAKE two cups of sifted icing sugar and stir in about two tablespoons of fresh lemon juice and one tablespoon of vanilla essence.
