You would think this is a difficult recipe, but it’s easy to make, well, simpler than using fish fillets.
Ingredients
2 cans of middlecut fish
1kg haddock
Finely chopped onions
Celery chopped
Tomatoes chopped
2 grated carrots
Two tablespoons of breadcrumbs
Two eggs
1 tablespoon of hot chutney
Pepper and salt to taste
Method
Steam the haddock in the microwave in milk for two minutes, open middlecut cans, remove centre bone and mix well with haddock. Next, add the carrots, onions, tomatoes, chutney, pepper and salt, eggs and celery.
MIX REALLY WELL. Roll into little balls and refrigerate for 30 mins.
Heat a pan with enough oil to deep-fry, wait until oil is hot and turn heat down to medium, press your frikkie balls flat and fry until golden brown, that’s two minutes on each side.
Enjoy with a salad, baked beans and mash, or on toast.
