Ingredients
Tinned tuna
Tinned kidney beans
Corn tortilla chips
Limes (or lemons)
Cheddar cheese
Yoghurt (or sour cream)
Coriander
Method
Start by adding the tuna, yoghurt and chopped coriander in a bowl.
Add some salt and pepper to season.
Squeeze in the lime juice. This gives the recipe that amazing zingy taste.
Evenly spread the corn chips out onto an ovenproof tray.
Strain the beans and spread them all over the corn chips.
Spoon the tuna mixture in small-but-even piles over the tray of chips.
Cover the whole mixture with a generous amount of grated cheese. You can never really have enough cheese when it comes to this sort of dish, so don’t be shy!
Pop the tray under into the oven at 200°C for 2-3 minutes until the cheese has melted and the mixture has warmed slightly.
Remove and serve family style in the centre of the table for people to help themselves.
The combination of beans, tuna, the crispy chips and the oozing cheese makes this a winner.
