500g grated coconut

100g flour

220g butter

200g sugar

4 eggs

1 tsp baking powder

¼ tsp salt

¼ tsp vanilla essence
Yields about 40 biscuits
Method
Beat the butter, sugar, salt and vanilla essence in a large bowl till light and fluffy.
Beat in the eggs, one at a time.
Add flour and baking powder and beat well.
Finally, add the coconut and mix using a spatula or a wooden spoon.
Form small balls of the mixture and place them on an oven tray covered with parchment paper. (I measured 30g of mixture for each ball).
Place in a pre-heated oven at 170°C for about 20 minutes.
Check the biscuits after 10 minutes, if the bottom is brown and the top is still white, lower the temperature.
If needed, turn on the grill for a few minutes before taking them out of the oven.
At this point watch them carefully so that they don’t get burnt!
