Ingredients:

1 medium onion

1 loaf bread

2 large ripe tomatoes

2tsp olive or canola oil

5ml dried or 10 ml fresh thyme

5ml lemon juice
- 5 ml black pepper

30ml butter
-
2 tbsp chutney
-
125ml grated chedder or mozzarella
Method:
Fry thinly sliced onions in oil in a large frying pan until completely soft.
Season with thyme leaves, lemon juice and black pepper.
Divide butter between 12 slices of bread.
Spread chutney on 6 slices of bread.
Slice tomatoes and arrange on the 6 bread slices.
Divide onions and cheese between the 6 slices and top each with a second bread slice.
Place in a closed-hinged braai grid and toast over medium to low coals.
