Ingredients
Marinade:

1kg stewing beef, cubed

Black pepper

1 small onion, finely chopped

4 cloves garlic, crushed

15ml (1 tablespoon) curry powder

5ml (1 teaspoon) salt
Sauce:
-
15ml (1 tablespoon) sunflower oil
-
Salt to taste
-
750ml (3 cups) boiling water
-
15ml (1 tablespoon) curry powder
-
2 to 3 sprigs of fresh thyme
-
1 large onion, finely chopped
-
1/2 each green and red pepper, diced
-
1 can (410g) chopped tomatoes
-
45ml (3 tablespoons) tomato paste
-
2 medium potatoes, cut in large chunks
Method
In a large bowl mix together beef, black.
pepper, onion, garlic and 1 tablespoon curry powder and marinate for at least 2 hours or overnight.
Add salt to marinated meat (salt will pull the juices from the meat when marinating so add it just before browning).
Heat oil in large saucepan, add the beef, fry until meat is brown.
Add 2 cups of boiling water, stir in curry powder; cover pot and reduce heat to medium, simmer for 45 minutes to 1 hour.
Add thyme, onion, peppers and remaining 1 cup boiling water, stir in tomatoes and tomato paste.
Add potatoes, cover pot and cook for 30 minutes or until beef is very tender and sauce has thickened.
Serve with steamed rice and vegetables.
